Working out of Brooklyn, NY, Mast Brothers has slowly been building critical acclaim and a widening fan base. They specialize in “bean-to-bar” chocolate, hand crafted from carefully sourced cocoa beans from around the world . Tried side-by-side, the post-fermentation smoked Papua New Guinea bar and the single farm Sambirano Valley bar from Madagascar have distinctively different and decidedly delicious flavor profiles – as do all their chocolates.

We don’t offer many “signature drinks” at dose, but we do take care in the options we have. In fact, for the last year we’ve offered 5 carefully crafted syrups that we make in-house, including a Golden Syrup, which is our answer to caramel.

It’s essentially a thinned version of the British cane syrup, Lyle’s Golden. Lyle’s has been produced in England since the late 1800′s and is one of the last remaining sugar cane refineries in the world. They produce a rich but delicately sweet product that blends perfectly with tea or coffee. We like to use a dram in our latte when we have a sweet tooth –  it satisfies the craving without overpowering the flavor.

ADAM DAY is the recipient of a 2010 Poetry Society of America Chapbook Fellowship for Badger, Apocrypha. He is also the recipient of a 2011 Pushcart Prize, and a 2011 PEN Emerging Writers Award. His work owes a debt to the editors of the Boston Review, Guernica, AGNI, Forklift: Ohio, The Kenyon Review, and others. He is the recipient of a Kentucky Arts Council grant. He coordinates The Baltic Writing Residency in Latvia, and is an editor for the literary and comics journal, Catch Up. Currently, he is writer-in-residence at Earlham College.

HANNAH GAMBLE is the author of Your Invitation to a Modest Breakfast, selected by Bernadette Mayer for the 2011 National Poetry Series (Fence Books, 2012). She lives in Chicago where she is the Poet-in-Residence at Children’s Memorial Hospital and teaches Literature and Writing at Prairie State College. Her poems and interviews have appeared or are forthcoming in American Poetry Review, Indiana Review, Ecotone, Mid-American Review, and elsewhere.

GARY L. MCDOWELL is the author of American Amen (Dream Horse Press, 2010), winner of the 2009 Orphic Prize for Poetry, and is also the co-editor of The Rose Metal Press Field Guide to Prose Poetry: Contemporary Poets in Discussion and Practice (Rose Metal Press, 2010). His poems have appeared in various literary journals, including The Bellingham Review, Colorado Review, The Indiana Review, The Laurel Review, New England Review, Ninth Letter, and Quarterly West. He lives in Nashville, TN where he is an Assistant Professor of Creative Writing at Belmont University.

RICK HILLES is the author of Brother Salvage, winner of the 2005 Agnes Lynch Starrett Prize (Pitt Poetry Series, 2006) and named 2006 Poetry Book of the Year by ForeWord Magazine. His work has appeared in Harper’s, The Nation, The New Republic, Poetry, Ploughshares; he’s been the Amy Lowell Traveling Poetry Scholar, a Stegner fellow at Stanford, and a Halls fellow at the University of Wisconsin in Madison. He grew up in northeastern Ohio and is an Assistant Professor in the English Department at Vanderbilt University.

This coffee is grown by the same producer as the Finca El Puente we’ve served but, like the Finca Nueva Armenia Grotto, is taken from the highest plot of the farm. While altitude doesn’t always mean better quality, it does slow the maturation of the coffee cherry and theoretically allow the plant more time to impart compounds that positively effect the flavor profile.

Impressively, Los Cipreses is touted as “…the best in Latin America” – which is saying something coming from a company like Counter Culture. They note it has a “…perfectly clean, balanced coffee flavor with a fragrant hint of fruit and perfume…” Basically, it’s got a flavor profile that will appeal to just about everybody.

Some naturally processed coffees can be overwhelming, with their fruit-like flavors and pungent aroma, but the Idido is amazingly balanced and clean. Counter Culture describes it as having “notes of strawberry, blueberry, and orange zest with a balanced, chocolate-like sweetness.”

The second coffee is one that we’ve had on our shelves for a couple of weeks now. It’s a micro-lot from the Finca Nueva Armenia farm in Guatemala. This is a farm that Counter Culture has worked with for awhile now, this year they asked them to separate the coffee harvested from the highest section of the farm. The result is a great coffee with notes of “candied ginger, sugar cane, citrus, and stone fruit with a crisp, dry finish.”
