There are moments in life when you taste something and it completely changes your perspective on what you can get from a certain type of product. It could be an fresh-picked heirloom tomato, a masterfully crafted beer, or a hand-brewed cup of coffee. If you haven&#8217;t already had this happen with chocolate, <strong>Mast Brothers Chocolate</strong> will most certainly do it &#8211; and we&#8217;re proud to now be selling a selection of their bars at dose.</p>
<p>Working out of Brooklyn, NY, Mast Brothers has slowly been building critical acclaim and a widening fan base. They specialize in &#8220;bean-to-bar&#8221; chocolate, hand crafted from carefully sourced cocoa beans from around the world . Tried side-by-side, the <em>post-fermentation smoked</em> Papua New Guinea bar and the single farm Sambirano Valley bar from Madagascar have distinctively different and decidedly delicious flavor profiles &#8211; as do all their chocolates.</p>
<p>If you&#8217;re still not convinced, then take the opportunity to try some at dose. on <strong>Thursday February 9th</strong> as we lead a tasting of chocolates from Mast Brothers, Askinosie, and Ritual &#8211; paired with some fine coffees from our latest Featured Roaster, <strong>Verve Coffee</strong> in Santa Cruz, CA! It just may be an &#8220;ah-ha&#8221; moment for your tastebuds.</p>

<p>It&#8217;s essentially a thinned version of the British cane syrup, <em>Lyle&#8217;s Golden</em>. Lyle&#8217;s has been produced in England since the late 1800&#8242;s and is one of the last remaining sugar cane refineries in the world. They produce a rich but delicately sweet product that blends perfectly with tea or coffee. We like to use a dram in our latte when we have a sweet tooth &#8211;  it satisfies the craving without overpowering the flavor.</p>

<li><strong>Guatemala &#8220;Chirrepeco&#8221; &#8211; Black Tea</strong><br />
First off, it&#8217;s a tea from Guatemala, which is pretty cool considering how many great coffees we&#8217;ve had from there. Second, it&#8217;s really good. Smooth and medium bodied with some nice sweetness, this is a black tea worth enjoying sans cream and sugar.</li>
<li><strong>Darjeeling &#8220;Makaibari Estate&#8221; &#8211; White Tea</strong><br />
An incredible offering from the Darjeeling region of India, typically known for its black teas. This organically grown tea is beautifullyprepared and steeps up a sweetly fragrant cup with subtle fruit notes.</li>

This 75% dark chocolate bar is nothin&#8217; but cocoa beans and cane sugar and Ritual&#8217;s taste descriptors are right on: &#8220;<em>High notes of blackberry, earthy undertones and a long, floral finish</em>.&#8221;<br />
Ritual also just received mention in the Jan/Feb issue of Imbibe Magazine, which also happens to be available at dose <img src='http://s0.wp.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>

<p>We don&#8217;t talk as much about tea around here as we do coffee, which is really too bad considering how many great teas we actually have. A well brewed cup of tea can be quite refreshing and on these cold, damp,  &amp; sniffly, December days &#8211; and it can be quite restorative as well. Here are three selections that we&#8217;ve been enjoying lately:</p>
<ul>
<li><strong>Assam <em>Mokalbari Estate<br />
</em></strong>:: A wonderfully dynamic tea. Assams are typically considered &#8220;breakfast&#8221; teas, and they take to milk and sugar well. However this one is great on its own too, with more delicately &#8220;bright&#8221; flavor notes than usually found in Assams (4oz/12) ::</li>
<li><strong>China <em>Downy White<br />
</em></strong>:: Light, sweet, and fresh aroma and flavor. This white tea will take you right back to the warm spring days we miss so much right now. (3.50/oz) ::</li>
<li><strong>Fujian <em>Iron Goddess of Mercy</em></strong><br />
:: Besides having the best name for a tea, the Ti Kwan Yin style oolong is also a customer favorite. It&#8217;s got a great blend of sweet and toasty notes from its moderate oxidization. (4oz/10) ::</li>
</ul>

He is also the recipient of a 2011 Pushcart Prize, and a 2011 PEN Emerging Writers Award. His work owes a debt to the editors of the Boston Review, Guernica, AGNI, Forklift: Ohio, The Kenyon Review, and others. He is the recipient of a Kentucky Arts Council grant. He coordinates The Baltic Writing Residency in Latvia, and is an editor for the literary and comics journal, Catch Up. Currently, he is writer-in-residence at Earlham College.</p>

His work has appeared in Harper&#8217;s, The Nation, The New Republic, Poetry, Ploughshares; he&#8217;s been the Amy Lowell Traveling Poetry Scholar, a Stegner fellow at Stanford, and a Halls fellow at the University of Wisconsin in Madison. He grew up in northeastern Ohio and is an Assistant Professor in the English Department at Vanderbilt University.</p>

<p>For the next couple of months we are featuring coffees from <strong>Intelligentsia Coffee</strong> on our <em>By-the-Cup</em> menu! We&#8217;ve carried great coffees from them before and our current selections live up to the memory:</p>
<ul>
<li><strong>Celebration Blend </strong><em>{Kenya, Ethiopia, and Colombia} </em>:: Notes of orange peel, red currant, and mulling spices ::</li>
<li><strong>Anjilanaka, Bolivia</strong> :: Smooth body, flavor notes of apple skin and honey, caramel and hazelnut in the finish ::</li>
<li><strong>La Perla de Oaxaca, Mexico</strong> :: Creamy swiss milk chocolate paired with a lemon drop candy acidity and a light note of fresh blackberries ::</li>
</ul>
<p><strong>Intelligentsia</strong> is known for buying only the <em>very best</em> coffees and paying the producers/farmers <em>very well</em> for it. They spare no cost for quality and give the coffees a very light roast to open up the beans and showcase their natural sweetness. Definitely some of the <strong>cleanest</strong> and most <strong>pristine</strong> coffees you can find from a roaster in the the US.</p>
<p><strong>Now brewing via Chemex and Clever in-store,</strong> and available by-the-bag to take home. <em>And we needn&#8217;t tell you that they make a great holiday gift for even the most discerning of coffee connoisseurs <img src='http://s0.wp.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </em></p>
<p>On a final note, we now have our very own Planetary Design travel mugs and Airscape canisters! These are not just aesthetically pleasing, they are actually well made and function great (we even use the Airscapes for our tea and coffee in store).</p>
